Vestry Wines is proud to announce the arrival of Ransom's "Old Tom Gin"

In coordination with mixologist authority David Wondrich, Ransom Wine Co. has created this Old Tom Gin in the style of Old Tom recipes from the 1800's. The result is a beautifully crafted spirit of classic expression from days long gone. Three to six months of barrel age result in a beautiful light copper hue. The spirit itself shows an excellent balance of all its parts with juniper, lemon & orange peel, and cardamom taking slightly more spotlight than the rest. Add a dash of water and the texture becomes warm and silky. Additionally more notes of spicy candied citrus fruits, flutters of nutmeg and the lightest notes of oaky vanilla make their presence known on the palate. The finish is smooth, warm and ever so slightly off dry though I doubt any simple syrup was added to this spirit. This is a far cry from your standard London Dry Gin of the modern day bar.

Though our first impulse is to refrain from throwing this in a martini with dry vermouth, this quirky little gin drinks quite nicely over a cube of ice. You could also make good with this gin in any cocktails calling for sweet vermouth, fruit juices or as a base for a refreshing punch.
